Delicious Banana Walnut muffins without eggs

Ingredients


Bananas - 3 Nos
All purpose flour - 2 cups
Brown Sugar - 1 cup (or sugar)
Walnuts - 1/2 cup
Butter+Vegetable oil - 1/4 cup (instead of butter, margarine can also be substituted)
Milk - 1/4 cup (warm milk)
Baking powder - 1/4 tsp
Baking soda - 1/4 tsp
Lemon juice - 1/2 tsp
Vanilla essence - 1/2 tsp
Cinnamon powder - 1/2 tsp
Baking cups (optional)
Salt - 1/2 tsp

Method


1) Peel ripen bananas and mash it well.(Ripe bananas tastes better)
2) In a large mixing bowl  sift all the dry ingredients namely all purpose flour, salt, baking powder and cinnamon powder together
3) In another container combine butter+vegetable oil mixture, vannila extract and brown sugar and beat it together with little warm milk untill they are nice and fluff..
4)Combine the above mixture slowly into the dry ingredients folding them together gently. Make sure there are no lumps in the mixture..
5)Add milk if necessary to get a smooth mixture.
6)Additionally you can incorporate walnuts, raisins and even small cubes of fresh strawberries into the mixture at this point.
7)Finally dissolve the baking soda in fresh lemon juice (fresh lemon juice works better) and pour this in the above mixture.
8)Give it a quick stir untill the baking soda and lemon juice are well mixed. This will let the muffins raise while baking.
9) Grease the muffin pan. Place the baking cups on the pan and pour the contents evenly into the muffin cups.
9)Preheat the over at 350F/180C and bake them for 12 - 15 mins untill a knife when inserted in the middle of a muffin comes out clean.
10) Remove the muffin tray from the oven and cool it before serving.

Note: Donot add too much baking soda with lemon juice (cracks may develop in the bannana muffin)
If you don't have a muffin tray, pour it in a baking pan and then later on cut it into cubes and serve it in a baking cup. Anyways it tastes good..
